Pinnacle Grill, Holland America Line’s signature steakhouse, is introducing new dishes. The establishment’s refreshed line-up features fresh seafood and vibrant flavors from 10 regions.
“The new Pinnacle Grill menu beautifully marries our classic steakhouse tradition with vibrant regional flavors and the freshest seafood,” announced Michael Stendebach, the cruise line’s vice president of food, beverage, and room divisions.
The menu’s regional offerings vary based on itineraries. Each locality has its entrées, mains, and desserts.
Here are some of the regional dishes you will find sailing Holland America Line’s ship.
Australia: Toasted brioche bun with grilled king prawns, Australian black Angus steak tartare, roasted rack of lamb with feta, seared scallops with quinoa apple salad, framboise mousse, and red berry pavlova
Alaska: Alaska crab and corn chowder, Dungeness crab with tarragon salad, seared Alaskan halibut with Thai red curry, sauteed prawns with garlic butter, and strawberry Romanoff bread pudding in Grand Marnier
Asia: Spicy tuna on crispy rice, seared beef tataki and crispy lotus chips, grilled ribeye steak bulgogi, tandoori lamb chop, scallops in red curry sauce, seared halibut, and mango sticky rice sushi
Canada/New England: Local Quebec pork and duck terrine, snow crab and corn chowder, Prince Edward Island mussels, venison medallion with huckleberries, steamed little neck clams, and chocolate tart with marshmallow
Caribbean: Crab and shrimp cakes, jerked chicken bao, yellow tail snapper, lobster agnolotti, Cuban mojo porkchop, the fresh catch of the day, and coconut pudding
Hawaii and South Pacific: Kalbi chicken tacos, coconut seafood chowder, the fresh catch of the day, Kabayaki pork belly, macadamia nut-crusted mahi mahi, miso-glazed Hawaiian ono, and piña colada trifle
Mexico: Mexico corn soup, rib eye tacos, red and green grilled snapper, Mexican grilled tenderloin, braised lamb shank (Birria de Borrego), and fresas con crema
Northern Europe: Norwegian-style cured salmon gravlax, asparagus risotto with seasonal fresh morels, venison medallion with huckleberries, Icelandic turbo and roasted porcini, baked Norwegian seafood thermidor, and Kvaefjordkake
South America: Corn soup, rib eye tacos, grilled beef tenderloin, red and green grilled snapper, lamb chops “gaucho” with lime mint chimichurri, and white chocolate pave
Southern Europe: Steamed fresh razor clams, seasonal fresh morels, asparagus risotto, seared veal cutlet, grilled Iberico porkchop, fresh branzino Livornese style, and chocolate parfait.
The lunch menu will preview that evening’s star dishes while region-specific mixologists will be available to craft complementary cocktails.
Stendebach assured passengers that old Pinnacle Grill favorites can still be enjoyed. “We kept many of our most popular dishes on the menu and are excited to introduce an array of new options,” he said.
Last year, Holland America raised the prices of its specialty dining, including the Pinnacle Grill to $45 per adult and $19 for children under 12.
