Virgin Voyages Adds Spanish Tapas Bar to Brilliant Lady

Virgin Voyages is adding another fresh concept to its growing list of onboard dining experiences — and this one’s got a Spanish twist.

The new venue, Rojo by Razzle Dazzle, will debut later this year on Brilliant Lady, the fourth ship in the line’s fleet.

A modern hallway with curved wooden arches, white walls, and a tiled floor leads to an open area with a seating arrangement reminiscent of a Spanish tapas bar. Subtle lighting accentuates the design elements, echoing the sophisticated vibe of Virgin Voyages' Brilliant Lady.

If the name sounds familiar, it’s a bold spinoff of the vegetarian-forward Razzle Dazzle restaurant on the other ships. But Rojo is going full Spanish, bringing tapas, pintxos, and bold flavors from regions like Catalonia and the Basque Country.

Virgin tapped chefs Justin Severino and Nate Hobart — the duo behind Morcilla in Pittsburgh — to head up the new dining spot. They’re known for their take on traditional Spanish dishes, and they’re bringing some of their greatest hits onboard.

One standout made the cut: Oxtail Montadito, that features braised oxtail, caramelized onion, Mahón cheese, and crostini.

Day-to-Night Dining Experience

By day, Rojo offers a brunch menu with a Spanish-American twist — think jamón croquettes alongside açaí bowls and frittatas.

Come dinner, the space transforms into a lively spot for shared plates and wine.

And speaking of wine: The beverage program was designed with help from Barcelona-based Onada Consulting. Expect Spanish favorites like Rioja reds, Albariños, vermouths, sherries, and sangrias — plus a few surprises like cava spritzes and craft cocktails inspired by bars in Madrid and San Sebastián.

New Look

A modern Spanish tapas bar interior features a long bench with black and white patterned upholstery. Tables are set with plates and cutlery. Booths with red accents line the opposite wall, reminiscent of Virgin Voyages' Brilliant Lady decor. Ceiling lights provide ample illumination.

The existing Razzle Dazzle space is getting a makeover to match Rojo’s new identity.

The décor will lean into deep red and orange tones, rich woods, and a mix of communal and cozy seating that’s designed to channel the energy of a modern Spanish tapas bar.

Fleetwide Culinary Updates

The Italian venue, is adding pastas, risottos, and monkfish, while Korean BBQ spot Gunbae is debuting kimbap rolls, bossam, and bulgogi fire meat.

These new additions are part of Virgin’s ongoing push to shake up the traditional cruise dining model, opting for specialty-style restaurants that are all included in the fare.

Coming Soon

Brilliant Lady is set to launch later this year, and along with Rojo, the ship will also feature seven original live shows and other updates still under wraps.
